Karma Borgo di Colleoli’s Head Chef Maurizio Valentini presents an extraordinary evening of culinary archaeology and contemporary cooking. Drawing inspiration from Pellegrino Artusi’s seminal “Science in the Kitchen and the Art of Eating Well,” Valentini transforms medieval Italian gastronomy through contemporary techniques, weaving stories of tradition, memory, and conviviality into each meticulously crafted course.
